Surplus-grade tank bodies and heavy plate fireboxes hold heat better, last longer, and produce a more even cook. Thin-walled store-bought smokers don't survive extreme heat and heavy commercial cooks.
The welds, the chamber, the seams — warranted for life against burn-through and structural failure. If you ever wear one out cooking, we'll repair or replace it.
Every highway-rated trailer is built with a boxed frame, Dexter axles, and DOT-grade wiring. Pull it across the state tomorrow — or across the country next month.
The Secret Sauce
Traditional horizontal smokers flood one side with heat and starve the other — you've got "the good rack" and "the warm rack." Reverse flow fixes that permanently.
Firebox is mounted on the opposite end of the stack. Smoke and heat travel forward under the steel plate rather than directly up the flue.
Hot gases flow the full length of the cook chamber, radiating through the floor plate and wrapping every rack with even, convected heat.
Gases travel the full rack line twice — under the plate, back across the top of the meat, then out the stack near the firebox. Double the contact, double the smoke flavor.
Upper and lower racks cook within the same 10-degree window. You fill the smoker to capacity at 10pm and sleep until 6am without rotating a single rack.

Our Story
Southwest Gallon grew out of the same story you've heard a hundred times: a couple of guys welding smokers out of a two-car garage for friends and family on the weekend, until the orders started showing up faster than they could burn the wire. What we didn't outgrow was the garage-level obsession with fit and finish.
There are no production lines, no overseas components, no stamped parts. Every unit is cut, fitted, welded, plumbed, painted, and tested by two hands in our shop between Midland and Fort Worth. If the cook surface has a hot spot, it doesn't leave. If a weld is porous, we grind it and re-run it. If the paint doesn't pass the 1200°F oven test, we strip it and reshoot it.
We build one smoker at a time because that's the only way to build one that lasts.
